Ingredients

  • ⅔ cup (40 g) walnuts
  • 1 cup (240 ml) hot water
  • 1 tbsp olive oil, used 2 times
  • 500 g boneless, skinless chicken thighs
  • 2 small onions
  • 2 garlic cloves
  • 1 tsp salt
  • 1 tbsp cinnamon
  • ½ tbsp ground coriander
  • 1 tbsp paprika
  • Freshly ground pepper to taste
  • ½ bunch fresh coriander
  • 300 g cherry tomatoes
  • Juice of ½ lemon
  • 1 bunch fresh parsley

Method

  1. 1Crush the walnuts and cover with hot water in a blender jug.
  2. 2Heat olive oil, sear the chicken for about 2 minutes on each side and set aside.
  3. 3Soften one onion, then add it and the pan juices to the walnuts. Add garlic and spices and blend smoothly.
  4. 4Return the sauce to the pan with the chicken. Simmer gently for about 40 minutes, turning occasionally and adding water if needed.
  5. 5Switch off the heat for the last 10 minutes and let the chicken rest in the sauce; stir in chopped coriander. Ensure the chicken is fully cooked.
  6. 6Chop the second onion and parsley and quarter the tomatoes. Toss with olive oil, lemon juice, salt and pepper.
  7. 7Serve the chicken with tomato salad and optional cauliflower rice.
