Sausages With Roasted Cauliflower & Sweet Potato Mash

Sausages With Roasted Cauliflower & Sweet Potato Mash

A hearty yet balanced supper: flavourful sausages, creamy sweet potato mash and golden roasted cauliflower — simple and satisfying.

To keep it effortless, simply buy ready-made sausages from the butcher or supermarket. The cauliflower roasts alongside in the oven while the mash comes together from a handful of ingredients — a dinner that keeps you full with protein and fibre.

Nutrition figures are copied from the meal plan; it does not specify whether they refer to one serving or the whole recipe. They are unverified estimates, not values for calculating your intake.

Tip: A quick tahini sauce goes well with this: stir tahini (sesame paste) with lemon juice, a little water, garlic and salt until smooth – done.

Ingredients

  • 300 g ready-made sausages (beef, pork or mixed, about 2)
  • 200 g sweet potatoes
  • ½ tbsp olive oil (for the mash)
  • 1 small head of cauliflower (about 400 g florets)
  • 1 tbsp olive oil (for the cauliflower)
  • 1 tsp rosemary or herbs of choice

Method

  1. 1Fill a pot with water, bring to the boil and cook the sweet potatoes for about 40 minutes until soft. Rinse under cold water and let cool slightly.
  2. 2Wash the cauliflower and break it into florets. Preheat the oven to 180°C fan. Place the florets on a baking tray and drizzle with olive oil.
  3. 3Roast the cauliflower for about 30–40 minutes, turning halfway through.
  4. 4Fry the ready-made sausages in a pan over medium heat for 10–12 minutes, turning often, until cooked through.
  5. 5For the mash, peel the sweet potatoes and mash them with olive oil and salt. Optionally refine with rosemary or other herbs.
  6. 6Plate the sausages, mash and roasted cauliflower. Serve with tahini sauce if you like.
