Avocado Toast With Pumpkin Seeds & Feta

Avocado Toast With Pumpkin Seeds & Feta

Creamy avocado on crisp sourdough provides healthy fats, fibre and valuable micronutrients. Topped with toasted pumpkin seeds, crumbled feta and cherry tomatoes — satisfying for a long time and blood-sugar-friendly.

Tips

A poached egg goes perfectly with it. Microgreens or sprouts add extra freshness and look lovely.

Ingredients

  • 2 thin slices of sourdough bread
  • 1–2 ripe avocados
  • 1 tbsp olive oil
  • a little salt
  • 60 g pumpkin seeds
  • 30–50 g feta, crumbled
  • 4 cherry tomatoes, halved
  • a little garlic powder
  • freshly ground black pepper

Method

  1. 1Toast the pumpkin seeds in a dry pan over low to medium heat until crisp and lightly golden. Set aside to cool.
  2. 2Halve the avocados, remove the stone and scoop out the flesh. Roughly mash with a fork in a bowl. Add the olive oil, a little garlic powder and salt and mix well. It should be creamy but still slightly chunky.
  3. 3Toast the bread in a toaster or pan until golden (you can use the olive oil to toast the bread instead of mixing it into the avocado) and let it cool briefly.
  4. 4Spread the avocado generously on the toast. Top with the toasted pumpkin seeds, halved cherry tomatoes and crumbled feta. Season with pepper and serve immediately.
